Galettes au fromage – cheese biscuits
For these delicious biscuits (from French Baking, Le Creuset) you will need: 225g unsalted butter, 200g plain flour sifted, 125g gruyere cheese (or parmesan if you find gruyere too strong), pinch of salt.
Whizz the ingredients in a food processor until they just about come together in a ball. Roll out to about 1cm thick and use your favourite cookie cutter to make your shapes. Re-roll the trimmings to get more biscuits.
Place on a baking tray lined with baking paper and bake in a pre-heated oven at 200°C for 15–20 minutes until pale golden brown at the edges. Remove from the oven and rest for a couple of minutes then carefully lift with a spatula and allow to cool completely on a wire rack. Take care when handling – and also when eating – as they can be rather brittle. Delicious served with chutney!
