But never mind… these biscuits are so delicious it’s even worth putting up with Salmon’s jesting.

The Rowes’ go-to recipe is slightly adapted from an original in Cucchiaio D’Argento. For 40 biscuits you will need: 280g flour 00 grade, 20g potato starch, 120g sugar, 100g butter softened, 1 egg, the zest and juice of one untreated lemon, 1 tsp baking powder, pinch of salt – plus, for the final sugar coating, a liberal amount of regular sugar and icing sugar (roughly 60g and 40g respectively).

Start by whisking the sugar and the butter until creamy. Add the egg and salt and keep whisking until well incorporated. Add the lemon zest and the juice. Mix well. Add the sifted flour and baking powder. Bring together the dough, wrap it in cling film and let it rest in the fridge for at least an hour.

When you are ready to bake your biscuits put the two sugars for coating in separate bowls, take the dough out of the fridge and cut it in half (we suggest you bake them in two batches to leave sufficient space between the biscuits on the baking sheet). From half the dough you should get about 20 biscuits. Divide the dough into small, walnut-sized pieces; make round and coat them in granulated sugar first, then in icing sugar. Arrange on a baking sheet covered with baking parchment (you are likely to need two baking sheets) leaving 3–4cm between each biscuit. Put them back in the fridge for at least another 30 minutes to firm up.

Bring the oven to 180°C and bake the biscuits from chilled for 25–30 minutes until they’re a light golden colour. The biscuits’ sugar coating will also develop attractive cracks. Once finished with the first batch, repeat with the second half of the dough, to get a total of about 40 biscuits.

Allow to cool before eating. Delicious with a cup of Earl Grey – or even on their own – for a well-deserved mid-afternoon treat.
