This one or that one, Fidget, which do you fancy?
Catalan Pimento Tartlets
Trota’s been feeling a little left out of late… And if you’re thinking that the boys are discussing z-list celebs or tabloid starlets, not so: Fidget and Salmon have come across this Marks & Spencer book of tart recipes. They all look so delicious that our dynamic duo are spoilt for choice which to try first. Unable to agree, they’ve decided to simply start from the beginning and work their way through the book.
So, to make these Catalan Pimento mini-tartlets you will need:
For the pastry: 115g plain flour, 50g cold butter cut into pieces, a pinch of salt and a little cold water.
For the filling: 1 large romano pepper roasted, 50g chorizo chopped in small pieces, a pinch of sweet smoked paprika, 1½ tbsp tomato puree, 120ml double cream, ½ tsp saffron, 1 egg yolk, 10g grated parmesan.
To make the pastry: In a food processor with a metal blade whizz flour, butter and salt to obtain a breadcrumb-like texture. Add cold water (1 tbsp at the time) and whizz until the pastry just comes together. Divide up the dough and fill six muffin-size holes in a baking tray that you have previously greased with butter and lightly dusted with flour. Place in the freezer for 30min.
Now for the filling: Fry the chopped chorizo. Peel, de-seed and shred the roasted pepper. Warm the cream in a saucepan with the saffron and let cool.
Take the baking tray out of the freezer, bake for 10min in a pre-heated oven at 220°C / gas mark 7. Meanwhile, whisk the yolk and mix it into the flavoured cream. Take out the part-baked tartlets and fill each one with some of the filling ingredients: tomato puree, chorizo, pepper, parmesan and paprika. Then distribute the cream mix between the tartlets and return to the oven for another 10–15min until set.
Allow to cool slightly before you tuck in – if you can wait. De–li–cious! So if all the tarts in this book turn out as tasty, you can bet Salmon and Fidget will be busy for quite some time. But Trota, please don’t take it personally…
