For Fidget’s favourite dessert you will need: 400g mascarpone cheese, 250g savoiardi biscuits (if you can’t find them, lady’s fingers will do), 130g granulated sugar, 4 egg yolks* and 2 egg whites, 200ml espresso coffee and a splash of your favourite liqueur (Fidget likes amaretto). Cocoa powder to dust.

Start by whisking the egg whites to stiff peaks.

Then, in a separate bowl, whisk the egg yolks with the sugar until they are creamy and fluffy. Gently fold in the cheese and, finally, the stiff egg whites to create your mascarpone mixture.

Working quickly, lightly dip the savoiardi both sides in the coffee/liqueur mixture and line the base of a dish (rectangular pyrex 30x20cm would be fine) with the biscuits. Spread some of the mascarpone mixture to create a layer and continue alternating biscuits and mascarpone until you finish your ingredients. Sift cocoa powder on top.

Cover the dish with its lid (or cling film) and leave in the fridge to set for a few hours at least, ideally overnight. Leaving such treasure in the fridge, no wonder Trota had to take precautions…
