Apple and blackberry crumble
Apples (450g, peeled and chopped – we used a mixture of Bramley and Cox), blackberries (250g), the juice of one lemon, 1 tsp each of ground cinnamon / ground ginger / ground cloves, granulated sugar (80g). For the topping: butter (100g), flour (120g), Demerara sugar (70g) and hazelnuts or almonds (70g, chopped) for a crunchy texture.
Mix the fruits with the spices, the sugar and the lemon juice and put in an oven proof dish. Mix the crumble ingredients with your fingers, trying not to over-mix, and cover the fruits with the crumble mixture.
Cook in a pre-heated oven at 190 degrees / gas mark 5 for 35-40 minutes, until the crust is cooked and golden. Serve with custard.
